This easy-as-hell-to-make black bean soup is packed with flavor and healthy ingredients. And black beans are chock full of protein and fiber, low in fat and rich in antioxidants. It’ll take about five minutes to put together, so get on it tomorrow when the temperature drops. Boss tip: Top with cilantro, diced red onion, hot sauce and avocado and serve alongside brown rice with shrimp for a truly epic meal. Prep Time: 5 minutes | Cook Time: 4-6 hours | Servings: 6-8 INGREDIENTS 1 pound dried black beans, rinsed 1 large onion, peeled and diced 4 cloves garlic, minced 1 medium red bell pepper, diced 6 cups vegetable broth 1 cup salsa (we like Whole Foods’ chipotle salsa) 1 tablespoon chili powder 1 teaspoon ground cumin 1 teaspoon oregano Salt and pepper, to taste DIRECTIONS 1. Place all ingredients in a slow cooker and season with 1 teaspoon of salt and 1/2 teaspoon black pepper. Stir well. 2. Place lid on slow cooker and cook on high for 6-8 hours. You want the beans to be very tender. Use an immersion blender to blend the soup until two-thirds of the beans are pureed and the soup is thick. Salt and pepper to taste, then serve warm with toppings. Enjoy!

This might be one of the best — and easiest — things to make in the world. Prep time comes in at around 5 minutes (7 if you’re really dragging ass), but it tastes like you’ve been working away in the kitchen all day. And now that fall is here, wouldn’t it be great to set this up before work and come home to a warm kitchen that smells great afterwards? What’s great about this recipe, too, is that it makes a LOT; around 8 servings. Freeze some for lunch during the week and mix & match what you serve it with. It’s a low-fat protein bomb that’ll keep you happy all week long. Boss tip: While the remaining juices and vegetables are great over the beef as-is, you can take it to the next level by blending the juice/vegetables with an immersion blender and then reducing by about half over low heat; approximately 15 minutes. Prep Time: 5 minutes | Cook Time: 4 hours | Servings: 6-8 INGREDIENTS 3-4 pound beef roast, preferably organic 1 medium onion, diced 2 medium leeks, sliced thin 2 cloves garlic, roughly chopped 1-1/2 cups beef or chicken broth, preferably organic 1/2 cup balsamic vinegar Pinch of red pepper flakes (optional) Sea salt and ground black pepper, to taste DIRECTIONS 1. Generously season roast with with sea salt, pepper and red pepper flakes, if using. Place, fat side down, in slow cooker. 2. Add onions, leeks and garlic to slow cooker, making sure to tuck some under roast. Add broth and balsamic vinegar. 3. Cover and cook on low for 8 hours or high for 4-5 hours. You’ll know it’s done with the meat shreds easily with a fork. Remove meat and set on cutting board. 4. Shred meat with a fork and serve over cauliflower rice — or whatever! — using the remaining juices from the slow cooker as gravy. 5. Enjoy!

This is one of our summer go-to dishes when we’re having friends over and want to fire up the grill. The marinade takes just a few minutes to whip together and while it’s best to leave the chicken marinade overnight for maximum tenderness, a few hours works, too.
